The basics of spirit energy is physical augmentation, such as improved endurance and speed, while sorcery is using it to manifest a hereditary ability, unique to each person—barring exceptional cases, each person only has one kind. For example, I knew someone whose sorcery was teleportation, and another person who could create bolts of energy.

Something like that. I's been a long time since I've seen Azami-san in action, but he formed them in his hands and attacked that way. He was extremely proficient in close quarters combat, to give you an idea of his style.
